Cheesy Corn Chowder

Believe it or not, this recipe came from Mark's high school librarian :) I use cheddar cheese instead of velveeta because its better for you. I also only use 1/2 onion.

Ingredients:
1 qt. Of potatoes, peeled and diced
1 chopped onion
½ cup celery chopped
2 cups water
2 cups evaporated milk
1 can cream corn
1 can whole corn
salt and pepper to taste
bacon bits
1/3 cup velveeta cheese
1/3 cup flour mixed with half of the evaporated milk

Directions: Cook potatoes, onions, and celery in the two cups water for about 10 minutes. Then add the corn. After these ingredients are cooked well, add the milk and cheese. Cook until mixed thoroughly and hot.

I made this last night for dinner. Very easy and my whole family ate it(even Jeremy). I'll be adding this to my recipes.

I made this for dinner last night and we loved it. It might have taken the place of my favorite soup. Darren added bacon bits to his, but he loved it too (and he generally does not like soups)! We had it with ham biscuits and it was delicious!
