Lynne's Party Meatballs

These freeze well, so I make tons at the same time :) We love to eat it over brown rice or quinoa. Its also a great thing to take to a covered dish :)

Ingredients:

2 lb. Ground beef
3 slices bread in crumbs
½ cup milk
¼ cup finely chopped onions
2 eggs
1 ½ tsp. salt

Sauce ingredients:
1 ½ cup ketchup
6 TBS. butter
6 Tbs. brown sugar
3 Tbs. vinegar
6 Tbs. water

Directions for Meatballs: Mix together and shape into 1-inch balls. Bake on cookie sheet 25-30 minutes at 375.
Directions for sauce: Mix ingredients together, simmer, uncovered, 5 minutes. Add meatballs to this mixture and heat thoroughly

I made these for dinner tonight and they were delicious! We voted that they were very similar to meatloaf but better because you get the sauce all the way around. :)

Do you freeze them plain and then make the sauce when you're ready to eat them?

Yes, but you can freeze the sauce as well -- just separately :) I usually freeze the meatballs on a cookie sheet and then put them in a freezer-safe ziplock bag. Then I freeze any leftover sauce in tupperware for a quick meal :)

Great quick recipe for meatballs!! I have two questions! 1) how do I know which recipes to thaw before baking if any? 2) Also, I know you are into healthy cooking, eating, and medicines. Do you use certain kind of plastic wrap and Tupperware to prevent leaching of the plastics into the foods you freeze? Do you use aluminum foil in your cooking?

I usually thaw both the sauce and the meatballs, but if the meatballs are going to be in the crock pot all day, they would probably be fine frozen as well.

I haven't found any special plastic wrap, but I have been slowly building up my store of glass storage-ware and I now freeze them in those. Lock N Lock often have good sales or you can buy a complete set on Amazon.
