Recipe Review: Cheeseburger zucchini Boats

I tried this recipe because it seemed simple and I thought the "boat" idea would be fun for my girls. And I was right! It is definitely not a "wow, this is amazing!" kind of recipe, but it is an easy, healthy, grain-free, "real food" recipe that we enjoyed so I will definitely make it again. My 4-year old does not usually like ground beef or zucchini: she prefers whole pieces of meat that she can dip in ketchup and yellow squash instead of zucchini. But I let her scoop out the insides of the zucchini, put a little ketchup on the meat, and sprinkle her own cheese, and she actually asked for seconds! (By the way, I have found that letting kids do the cooking a sure-fire way to overcome picky eating! Karis is always willing to try something that she has created!) Cheeseburger Zucchini Boats

3 small zucchini
1 pound ground beef
1 small onion, chopped tiny
1/2 t. garlic powder
1/2 t. chili powder
sea salt
1/2 cup cheddar cheese (I use raw white cheddar)

Cut off the ends of the zucchini and boil them for about 10 minutes. In the meantime brown hamburger meat, onion, garlic powder and chili powder. Salt to taste. Use a fork and spoon to scrape out the “zucchini guts” (sorry, I live with boys) and add it to cooked hamburger meat. Scoop equal amounts of hamburger mixture into each “boat”. Top with shredded cheese. Put in oven broiler for a couple of minutes until cheese is melted then serve right away.
