A new favorite Oatmeal Bake

I love my oatmeal casserole, but the directions don't call for soaking the oats, which I like to do for better nutrition. I found this recipe and have been using it instead. We really like it. I usually pour milk over it for Karis because she loves to eat it that way :) I got this recipe from Keeper of the Home, a blog I really enjoy.

1 cup oil (I use any combination of butter, coconut oil, or olive oil)
1 ½ cups sugar (I use honey- about 1/2- 3/4 cup or even less. Because we also add fruit, this seems to be enough sweetness for us. I've also used maple syrup with great success.)
4 eggs
6 cups oats
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon (a bit more cinnamon is good, too!)
2 cups yogurt or milk
Variations: Adding chopped apples or raisins (or both) before baking is a wonderful addition, almost like eating dessert for breakfast!

1) Prepare (oil) a 9x13 pan. Mix oats well with milk or yogurt mixture. If you used yogurt, let soak in pan overnight for better absorption of nutrients. Then add in the rest of the ingredients the next morning; mix well.
2) Bake at 375° for 30-40 minutes until lightly browned.
3) We pour raw milk or cream, and add raisins or other fruit (if not added during baking) before eating.

Healthy Breakfast Cookies

We made these cookies because Karis had been reading a book about making cookies and kept asking to make cookies. I don't make cookies often because my self control is seriously lacking in the cookie area and my toddler's is even worse :) Whenever we make a snack, she wants it for breakfast, lunch, and dinner. So I decided to search for a healthy cookie that I wouldn't mind her eating all the time to avoid the battle. I found this recipe at THIS blog. These are completely healthy, but definitely not as sweet as you would expect a cookie to be. My husband wasn't a huge fan, but they worked for Karis and I. And yes, she has been asking for them all day long!

I was out of milk, so I used a combination of yogurt and coconut milk instead. And I used coconut oil instead of butter. So the recipe is pretty flexible :)

Ingredients:
2 cups cracked oat groats (rolled oats work also)
1.5 cups freshly ground flour
1 cup butter
3/4 cup buttermilk/milk
3/4 cup honey

Directions: Melt the butter and honey, cool off some and then add the buttermilk, oats and flour. Cover and let sit for 12-24 hours. 24 hours being best, esp for the oats.

Add:
2 eggs
1 tsp salt
2 tsps cinnamon
1/2 tsp b soda
2 tsps vanilla
1/3 cup chocolate chips*

Mix well. Bake at 325 for 12-15 minutes.

Home-made Cliff Bars

I'm always trying to find healthy snacks for my toddler and husband to take on the go and this one is good. It's perfectly healthy except the oats aren't soaked for better absorption of nutrients, so I will try to make them healthier the next time :)

I found this recipe at the Health, Home, and Happiness blog

Ingredients:
4 cups rolled oats
1-1/2 cups crispy pecans (I suppose regular pecans could work too)
1-1/2 cup dates packed, approx 15 large ones
1/4 cup coconut milk
4 tablespoons grade B maple syrup (I would think that honey would work as well)
1/2 tsp sea salt

Blend in food processor in order listed above. Press into a 8x8 or 9x9 pan, bake at 325 degrees 30 minutes. Allow to cool for a bit, then cut into bars. Allow to cool completely before packaging.

Healthy Hint: Soaking grains and legumes

Whenever we make oatmeal, quinoa, beans, rice, or any other kind of grain or legume, I usually try to think ahead and soak it the night before in warm water. This is because soaking increases vitamin content and makes all the nutrients more available. I usually add 2 Tbs. buttermilk or yogurt with my grains because it works to break down to phytic acid and complex starches. That just means it helps my body digest it more easily and absorb the nutrients better. You might not notice the difference, but I have relatives with stomach issues who cannot eat a bowl of normal oatmeal but can eat it after being soaked overnight. It really does make a difference!

To make my life easier, I usually store my grains in glass jars in my pantry, already measured in 1 cup portions. Then all I have to do is pull it out the night before, add a cup of warm water and 2 Tbs buttermilk, and let it set overnight. Once soaked, oatmeal, quinoa, or other grains cook in less than 5 minutes in the morning! So simple and yet it makes a huge difference nutritionally!

If you want to know more about the benefits of soaking grains, please click HERE
Here is my basic recipe for oatmeal, quinoa, etc:

Ingredients:
1 cup oats (not instant!) or whatever grain you are using
1 cup warm water plus 2 Tbs. whey, yogurt, kefir, or buttermilk
1/2 tsp. salt (sea salt is the most nutritious, but any kind works :)
1 cup water for cooking

Directions: Mix oats with warm water mixture, cover and leave in a warm place for at least 7 hours and as long as 24 hours. After soaking, bring an additional 1 cup of water to boil with salt. Add soaked oats, reduce heat, cover and simmer several minutes. Remove from heat and let stand for several minutes. Serve with sweetener of your choice.
*Karis and I use a combination of coconut oil, applesauce, and cinnamon to sweeten our oatmeal. Maple syrup or raw honey are other good options.

And what do I do with leftover oatmeal? I mix an egg into it and fry it in coconut oil! Its a great way to get more coconut oil in us and Karis absolutely loves it! She will eat fried oatmeal cakes for breakfast and almond butter on her fried oatmeal cakes for lunch :) Yummy and so good for her!
