meal plan Nov. 15

Meals for this week:
Monte Cristo Sandwiches from leftover French Toast
Lime Chicken Tacos
Thai Coconut Soup (new recipe!)
Pumpkin Lasagna (new recipe!)
Shepherd's Pie
Steak and baked potaos

Next week: Going out of town and eating ALL THESE holiday favorites!

My Pumpkin Experiments :)

I have a very patient husband. He is not the least bit enamored with pumpkin the way that I am. And he laughs at my desire to try out a new pumpkin recipe every week. But at least he doesn't seem to mind all my new recipes too much. The only one he really loved were the pancakes, but the rest were "ok" with no complaints. I, on the other hand, was pretty excited about each one that I tried :)

Pumpkin pancakes -- a winner! So good that we will probably never make "normal" pancakes again! And they freeze well, so I triple the recipe every time I make them!

Pumpkin waffles -- I used THIS recipe but made it healthier by soaking my flour in the yogurt overnight. It was a little difficult to mix up and was thicker than most waffle recipes, but was oh, so yummy! These freeze well, too!

Pumpkin enchiladas -- I wanted the creaminess of THIS recipe, but the kick of the garlic and chili powder from THIS recipe, so I kind of combined the ingredients for the sauce in each of them and made my own :) I mainly followed the 1st recipe and just added in the garlic and chili powder for kick.

Pumpkin enchilada stir-fry -- By the time I had tasted and added and tasted and added to my enchilada sauce to get it the way I wanted, I had almost doubled the recipe, ha,ha. So later on in the week, I combined my leftover pumpkin enchilada sauce with home-made taco meat, beans, corn, diced tomatoes, and shredded cheese for a quick stove-top meal.

Pasta with Pumpkin and Sausage -- This was probably my favorite dinner with pumpkin in it because I loved the creamy sauce :)

Next to try: Pumpkin Lasagna! (I'm probably going to have to add some ground beef or sausage to keep my husband happy, though :)
