Homemade "Cream of... Soup"

For so long I have rejected all my favorite casseroles because I didn't want to buy canned soups. I wish I had just tried making my own a long time ago! This recipe is extremely easy and flavorful. I usually cook two chickens and make tons of stock from them every month so I always have plenty of chicken broth on hand to make this. Creamed soup will undoubtedly become part of my monthly cooking to make throwing together casseroles a cinch! Many thanks to Katie@ Kitchen Stewardship for posting such a great recipe. You should really check out her post because she gives some tips and great recipes! I added a bunch of minced onions, garlic salt, and cheese to make a very flavorful cream of cheddar soup. It worked well in replacing the yummy sauce in our favorite Chicken Divane Casserole.


Ingredients:

3/4 cup butter
3/4 c. whole wheat flour (can add more if you like a really thick base)
4 cups milk
2 cups homemade chicken stock (preferably condensed for added flavor)
Optional: Chopped onions

Method:

Melt butter over low heat. If using onions for extra flavor, saute in butter until limp. Add flour and whisk together until smooth. Cook 1 minute. Do not let it brown! Gradually add milk and chicken stock, stirring constantly. Remove from heat when sauce has thickened. This may take up to 15-20 minutes.

Options:

  • Cream of celery: Sautee a stalk or two of chopped celery with the butter before adding flour.
  • Cream of mushroom: Sautee chopped fresh mushrooms in butter.
  • Cream of broccoli: Add chopped steamed broccoli to the soup after it thickens.
  • Cheesy sauce: Add shredded cheese (sharp cheddar gives the most flavor) after removing from heat. Stir to melt.
  • If you want to make a big batch of soup and have different flavors, you can always saute mushrooms or celery separately and simply add to the finished soup, one can-equivalent at a time.

Cara's Baked Creamy Chicken Taquitos

My friend Cara sent me this recipe and we all really enjoyed it! Mark said it is one of the "most authentic Mexican-tasting dishes" I've made :) That is probably because of the cilantro, which I haven't used very much before but definitely will now! We used mild salsa instead of green salsa and I actually fried the tacos instead of baking them because Mark likes 'em crispy ). We paired it with Cara's quinoa and black beans recipe and it was quite a hit! It will definitely be a staple on my meal plan now!

3 ounces cream cheese, softened
1/4 cup green salsa
1 Tbsp fresh lime juice (juice from half a lime)
1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp onion powder
2 cloves garlic, minced
3 Tbsp chopped cilantro
2 Tbsp sliced green onions
2 cups shredded cooked chicken
1 cup shredded Mexican flavored cheese
small flour or corn tortillas
kosher salt
cooking spray

Preheat your oven to 425˚F. Line a baking sheet with parchment paper.

In a large bowl, mix the cream cheese, salsa, lime juice, ground cumin, chili powder, onion powder and garlic. Once combined, stir in the cilantro and green onions. Add the chicken and cheese; mix thoroughly.

(If you decided to prep this in advance, refrigerate the mixture at this point until ready to continue.)

Working with a few tortillas at a time, heat them in the microwave between two paper towels until they are soft enough to roll (about 20 – 30 seconds).

Spoon 2-3 Tablespoons of the chicken mixture onto the lower third of a tortilla. Roll the tortilla as tightly as you can.

Place the rolled tortilla seam side down on the baking sheet. Repeat with remaining tortillas until the mixture is gone. Make sure the taquitos are not touching each other. Spray the tops lightly with cooking spray and sprinkle with kosher salt.

Bake for 15 – 20 minutes or until crisp and golden.

Serve with salsa, sour cream or guacamole.

**To freeze: Before baking, chill the taquitos on the baking sheet in the fridge. Once completely cooled, wrap each taquito individually with plastic wrap. Place in a labeled freezer bag and freeze. To bake a frozen taquito (no need to thaw first): Preheat oven to 425˚F and bake for 20 minutes.

Lime Chicken Tacos

This awesome recipe came highly recommended by my sis-in-law, Terra, who got it from THIS blog. It has become a favorite for my family and for taking to potlucks as well! We love all kinds of tacos, and this one is super easy and delicious! The lime flavor adds a kick that my husband loves. I add a bit of extra juice just because we love it so much :) I also like to add diced pineapple and beans to the mix to make it tastier and feed more people. It is a great gluten-free dish if you eat it as soup or with quinoa instead of a tortilla!

1 1/2 pounds boneless skinless chicken breasts
3 Tbs lime juice
1 Tbs. chili powder
1 cup frozen corn
1 cup chunky salsa
1 can diced pineapples, drained
1 can black beans
12 flour tortillas, warmed
sour cream, lettuce, shredded cheese, avocado, cilantro and any other toppings you like

Place the chicken in a 3-qt. slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender.

Remove chicken; cool slightly. Shred and return to the slow cooker. Stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through.

Serve in tortillas with sour cream, cheese and lettuce if desired.

Gigi's Peanut Butter Rolls!

Since its getting close to Christmas, I thought I should post some of my grandmother's awesome candy recipes. This was my favorite growing up :)

Ingredients:

2 lbs. Confectionary sugar

3 Tbs. butter, softened

14 oz can of sweetened condensed milk

1 Tbs. vanilla flavoring

Small can of peanut butter

Extra confectionary sugar for rolling out dough

Directions: In a large, bowl, mix together sugar, butter, condensed milk, and flavoring. (Mixture will be very thick and needs to be worked with hands.) Roll out on board sprinkled with confectionary sugar. Spread peanut butter on and roll up like a jelly roll. Freeze for an hour and then slice. Keep chilled in fridge until ready to serve.

Toffee Apple French Toast Bake

Ok, so this doesn't fall under the particularly healthy category, but it is ever so yummy!

Ingredients:
8 cups cubed French bread
2 medium tart apples
1 pkg. cream cheese, softened
3/4 cup packed brown sugar
1/4 cup sugar
1-3/4 cups milk, divided
2 tsp. vanilla extract, divided
1/2 cup English toffee bits, almond brickle chips, or caramel chips
5 eggs

Directions: Place half of the bread cubes in a greased 13x9x2 baking dish; top with apples. In a mixing bowl, beat the cream cheese, sugars, 1/4 cup milk and 1 tsp. vanilla until smooth; stir in toffee bits. Spread over apples. Top with remaining bread cubes. In another bowl, beat the eggs and remaining milk and vanilla; pour over bread. Cover and refrigerate overnight.

Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 350 for 35-45 minutes until a knife inserted near the center comes out clean.

Gigi's Overnight French Toast Casserole

Oh, this is soooo good! My grandmother used to make this for us and my Dad continued the tradition. Now I make it whenever we have company come stay with us. Its great because I make it the night before and just pop it in the oven in the morning.

Ingredients:
1 stick margarine
½ cup brown sugar
6 eggs
1 ½ cup milk
1 tsp. Nutmeg
1 tsp. Vanilla
1 loaf cinnamon raisin bread or French bread

Directions:
Mix margarine and brown sugar in a 9x 13 Pyrex dish. If using French bread, slice into 1 inch thick slices. Place bread onto butter/sugar mixture. Blend eggs, milk, nutmeg, and vanilla. Pour over the bread slices. Let chill overnight. Remove from the refrigerator 30 minutes before baking. Bake uncovered, 45 minutes at 350. Serve warm with syrup and confectioner’s sugar if desired.

Gigi's Overnight Brunch Casserole

This is great for dinner or for when you want to make breakfast ahead of time!


Ingredients:

1 lb. Sausage or bacon or ham

½ lb. Grated sharp cheddar cheese

8 slices of bread

3-4 eggs

2 cups milk

½ tsp. salt

1 tsp. dry mustard

dash of pepper

Directions: Use a greased 9” x 13” casserole dish. Place bread as liner in bottom of dish. Layer cheese, then meat. Sprinkle these evenly over the bread. Mix together eggs, milk, salt, mustard, and pepper. Pour over casserole. Chill overnight. Bake at 350 for 30-35 minutes.
