This is another recipe that we ate at a covered dish and I had to look online to find a recipe that seemed similar. Mark loves this casserole so much that sometimes he will eat the leftovers for breakfast :) Great for potlucks!
Ingredients:
2 slightly beaten eggs
1 (8 ½ oz) corn muffin mix
1 can corn, drained
1 can cream style corn
1 cup sour cream or plain yogurt
½ cup butter, melted
1 cup shredded cheddar cheese
Directions: Combine all ingredients except cheese. Pour into a casserole dish. Sprinkle with cheese. Bake at 350 about 35 minutes until a knife comes out clean.
